Masala Squash

This squash is out of this world — the combination of sweetness from the squash and spice from the masala ghee + other spices is unlike anything you've ever had before. This is a crowd favorite and so easy to throw together as a weeknight side. 

Ingredients:

1 squash (acorn, butternut, acorn, delicata — any type will do. You can even use pumpkin!)

3 tbsp masala ghee

1 tsp kashmiri red chili powder (sub paprika)

1 tsp turmeric

1/2 tsp pepper

1 tsp salt

Method:

  1. Preheat oven to 415 F.
  2. Cut squash into small pieces (1-2 inches).
  3. Warm ghee so that it is melted, then pour over and mix with squash.
  4. Add spices, salt, and pepper.
  5. Cook in over for approximately 25 minutes, stopping halfway to turn the pieces over for an even bake.
