This squash is out of this world — the combination of sweetness from the squash and spice from the masala ghee + other spices is unlike anything you've ever had before. This is a crowd favorite and so easy to throw together as a weeknight side.
Ingredients:
1 squash (acorn, butternut, acorn, delicata — any type will do. You can even use pumpkin!)
3 tbsp masala ghee
1 tsp kashmiri red chili powder (sub paprika)
1 tsp turmeric
1/2 tsp pepper
1 tsp salt
Method:
- Preheat oven to 415 F.
- Cut squash into small pieces (1-2 inches).
- Warm ghee so that it is melted, then pour over and mix with squash.
- Add spices, salt, and pepper.
- Cook in over for approximately 25 minutes, stopping halfway to turn the pieces over for an even bake.
