Ingredients:
2 carrots, grated
2 tbsp crushed peanuts (sub cashew if needed) – dry grind in a coffee grinder
Lemon juice
Salt
Cilantro if desired
Recipe:
1. Combine grated carrots and crushed peanuts in a bowl. Mix together evenly.
2. Add a dash of lemon juice and salt to taste.
3. Garnish with cilantro if you like.
